This thread is dying.
It was Mole Mania, a cute and clever puzzle adventure game for the Game Boy.
I don't see any hints out currently so I'll make one.

Should I just run through the list of every Castlevania game, then? They all fit, except for that one where the main character was a woman.

This is a pretty non-specific clue. The number of games in which you fight Death is probably in the hundreds, if not thousands. And the main character is probably cursed somehow in most of those.
Good point, I was worried about making it too obvious, and made it too obscure while doing so.

I'll redo the clue: A cursed man who is able to transform, and fights death when it comes for him.

I hope thats a little better.

Nope, it's not a castlevania game at all. If it helps, I'll point out that the cursed man in mine literally fights death.

None of the characters are cursed in the Castlevania games except for like, uh, two of them.

Nope. Since nobody has a clue, I'll elaborate on the hint.

The cursed man I mentioned, his transformation is done by fusion, and the fight with death, is a fight with the grim reaper.

Feld: Depends how loosely you use the word. Just being in a family destined to fight Dracula is a pretty bad curse to begin with, from a certain point of view.

The idea of fighting Death makes me think of Gauntlet. You know, the game where Death showed up, attacked you for a while, and then usually got bored and left before you actually died. I assume that's not it, though, since you didn't transform and weren't cursed. Though you, as the player, might have cursed at the arcade machine upon hearing "Wizard needs food badly!" for the hundredth time.

My next guess is Dante's Inferno.
Ahh gauntlet...I remember that game, and nope, thats not it. I can see your point of view on it though. It is not dantes inferno either (I remember that fight), but good try.

To add on to my previous hint, the game uses a unique turn based system.
Okay I've talked about that game a lot: Shadow Hearts.
Harmonixer = being doomed. He fuses into monsters and can fight Fox Face (referred to as the Grim Reaper although he isn't really...)
Avee has won it! I'm surprised nobody has got it sooner (i used grim reaper cause I figured people would not recognize fox face). Next hint is up for grabs.
