Is this like the Summon Night system? Where you talk with everyone at the end of the day?

Excellent question!
There are different dots on the WM some of which are zones where you can have these types of events. The further you go through the game the more dialog will be offered.
Also, if you missed out on a piece of info/scene from before: the game remembers which conversation you left off at and will add the new information along with the old to make realistic dialog.
