I love to put cheese on sandwiches but I've recently found out that processed meat is apparently very bad for you. That's not good, because I can't afford the properly cut deli meat and sandwiches are my favorite.

I don't think I could live on just rice and vegetables. I mean, its worth a shot. But I'd have to give up on soda because rice and soda don't go-

I'm sorry, I'm rambling: I like cheese too! Cheddar & provolone!

I love cheese. I love the the robust, earthy flavor of Gouda. I like the creamy decadence of Brie and other rennet cheeses. I love the bitter tang of Swiss and the smooth tint of mozzarella. I love what real Parmigiana-Regatta does to my spaghetti sauce. I love pepper jack on my turkey sandwich. I love oak aged white cheddar with crackers, hard salami and olives. On the rare occasions I find it, I even indulge in the smooth, yet somehow tart flavor of Limburger (though I dare not bring this particularly aromatic cheese in the house as the smell is particularly strong and drives the dogs and cats nuts--they love cheese too!).

Don't even get me started on the multitude of olives available...

I actually made ratatouille for my wife about a month before she died. I had no idea what I was getting myself into. I used the recipe that was used in the Disney movie (which was the only reason she wanted to try it so I figured that would be the recipe to use): Thomas Keller's confit byaldi. Four hours to prepare. For a first attempt, I think it turned out really great. In fact, I've had far simpler dishes end in disaster.

She loved it. I promised I'd make it for her more often. I never got a chance to make a second attempt.

Edit: Sorry, it's just totally unexpected, the little comments that make a person think about certain things. What is innocent to one person strikes another as a bolt from the blue.

Only if you mention king river gold. Which one should not unless you want to cause riots.

It occurs to me I could double my vitamin intake if I would just buy and eat veggies in addition to cheese!
Does liking soya cheese count? (It’s actually pretty good – and healthy, too!)

It's for vegans and the lactose intolerant. It has the consistency of grata (crumbly cheese, like Parmesan). The thing is, soy has become a major industry since the vegan movement got under full swing and and thousands of acres of rainforest has been cleared to make way for soy farms. The ecosystems of entire islands have been destroyed for soy. The palm oil industry is wreaking similar havoc on Earth's environment.
Cheese is extremely expensive here. It's ridiculous.

Not only that but a lot of the health benefits are exaggerated on it. Yes, it's not as bad as some things but... it's not -that- good for you (much for the same reason people are lactose intolerant).

But I mainly buy soya cheese because, like Kirroha said, it’s freakin’ expensive as hell to buy regular cheese in most grocery stores compared to soya, which is usually about half the price. Either way, I like both regular types of cheeses and soya but mainly prefer soya just to cut out some of the calories and switch it up a little bit. It probably doesn’t really matter a hell of a lot, but whatever, damage is already done.
Oh dear, I never knew that eating soy was bad for the environment. Is it the same for soy milk and tofu as well? Or is it just soy cheese?

Not trying to make anyone feel bad. Spreading awareness like savory Brie over fresh French loaf. And soy is soy, no matter what it put in. It all comes from the same place(s).

The thing is, those of us who are aware and do actively adjust our habits accordingly, we do make a difference, and the more of us participate, the slower big industry progresses. If enough of us do something, the march stops altogether!

As for cheese being hella expensive. Yes, I hear that. If it's possible, it's always better to buy locally and you can usually find better prices that way. That includes soy cheese. Locally grown soy will promote local businesses just as well buying anything else locally.
