I never really use them because they're always low accuracy and never work on bosses.

They super ultra suck when the enemies have them though. :(

I never got the "low accuracy/high damage or instant death/OP skill" option. more often than not you might as well just do something else unless you're feeling like gambling. If the skill has very little MP and you just wanna see if ya can then I guess that can be fun. I admit I'm guilty of making a few skills like this in my games just to have something to take a chance with.

but, generally I dont use them. I like the idea when enemies have them because it adds instant tension like someone might die. but those are usually lesser encounters so they aren't insanely brutal
Ever play Dragon Quest II? The spell Sacrifice, when used by enemies, wipes your whole party and works 100% of the time, and they can even use it in an ambush encounter! That's the fun stuff right there.
Yeah. Particularly... (putting up spoilers)

I was playing Enelysion just a few minutes ago and was fighting against one of the major bosses, Death On Two Legs with Laine and her two other party members. And each time I use some kind of buffer or defense skill and/or item on either Laine or the other party members or just plain out use a skill that will damage the enemy I get instantly killed with the skill Phobos. I'm about level 25 with most of them and it gets SO frustrating each time because I can't even lay a single finger on the dude without him killing Laine and getting a game over within seconds.

URGH. LUCHINO HELP ME.

When an enemy as them, they're really cheap shots.

That's only one enemy though. You can run away before he uses it, you can overpower him before he uses it, or he may just use one of his other skills instead.

Final Fantasy 2 did it worse.

He casts Death 10 on the entire party. There're no Death-resistant equipment or spells, he only travels in packs of 3-4, they appear at the back of the enemy posse meaning you need Bows or Magic to hit them, and due to the quirky leveling of FF2, most players won't be able to run away.
The only saving grace is that you don't need to travel the sections of map he inhabits. You can bypass them completely with the canoe or airship.

It's just another way to win. You don't have to abide by it, though.

On the other hand, fighting an enemy with an instant death skill can be tricky, but that's why there's strategies.

Instant death is really cool when the game actually gives it to you with the intent that you'll use it, though.

Cuz then you can throw really tough enemies at the players and the players can be like "NAH" and then they go flying off into the sky.

It just sucks when the enemies have it to. But even that can be fun because then that makes certain foes more dangerous and more exciting to encounter.

I don't like ever giving it to the enemy, but if the player has it, you can do fun things with it, like making it work mostly or 100% of the time against certain types of enemies. You gotta let the player know that, of course. For one of my Swapsies game, I gave the hero an instant death spell that actually worked most of the time against non-bosses, but some players never touched it because they assumed it would be a waste XD

I'd really like to get rid of LockeZ. His play style is way too unpredictable. He's always like this too. If he ran a country, he'd just kill and imprison people at random until crime stopped.

I have spent approximately one hundred million hours trying to convince a specific developer who's a friend of mine to stop giving AOE instant death attacks to enemies. He is convinced that it's fine because the player can equip instant-death-proof accessories. IT'S FUCKING NOT.
Whoah. Are you serious? I feel like that's handling instant-death skills/weapons in a very bad manner. He should probably listen and switch it up.
