Alter them in what way? Do you want to change the graphic of the bars? The layout of the stats? It'll help to be a little bit more specific.

Are you using VX Ace? If you go into the script and select Window_Base, then go to lines 161 - 170 will have color values that determine the colors of the gauges you mentioned. Some colors have gradients, so color1 will be the color on the left, and color2 will be the color on the right.

Now if you wanted to change the gauges themselves, well, I can't help you there. But I do know that Yanfly's Core Engine scripts lets you have full customization over the color and dimensions of the gauges.
