Is there any way to move all of the text in the game just a few pixels upward? I'm working with a pixel font and for whatever reason, letters with tails such as g/y/j/p/q get cut off in pretty much every menu.

^ notice how the g in "slingshot" gets cut off. There's also the fact that the text lies at the very bottom of the selection area, which would also be solved by moving the text. If there's any way to do that, I'd love to know.
Also, the word "slingshot" is squished quite a bit, any way to fix that besides just using a different/shorter word? Clearly there's plenty of space for it to use, it's just... not using it for whatever reason.

The problem isn't the amount of space available for the text, but the text object itself having a width less than the actual width of the text it contains. If you increase the width of the bitmap holding text in the menu, that'll fix the second problem.
Regarding the placement, you can change that too. Check the classes for battle windows.
