A FF12 style interface would be interesting with Diablo 2. It'd certainly deal with the "oh boy an army of fodder! clickclickclicklclickclickclickect" issue. Add infinite inventory and you can actually make some headway into the interface issues of the game
Of what I've seen of the ES mod, implementing either would be a terrible clusterfuck of an interface. Want to dump a stack of different runes into your rune stacker? Well you have to make sure you have the right level of rune stacker and then dump the same type of runes into the cube with the stacker, cube, repeat for the level of runes. Hell they made mods for mods to cut down on all this tedious shit which comes down to 'let a bot do it'. Diablo 2 also has downright terrible mod support and crashes are as frequent as trying to find out how to get Mod X working (assuming it even works with Mod Y and Z)
Plus if you need shit mods to convert a shit game into a less shit game, you get shit like Oblivion

btw, Dragon Quest VIII uses leveling monsters.
So I've been playing this... and yeah; I dont think this game has aged gracefully.
The awful resolution, the shit UI, and godawful font that makes things borderline unreadable (which isnt especially good when you need to read a laundry list of stats).
I probably would have enjoyed it more if I had played it back when it was released. Games with strangers aren't terribly fun and the lack of an early game AOE attack is really, really annoying. I got the Battle Chest for 20$, my barbarian is level 10 and I'm wondering if I should even bother with the game anymore.

the only thing that annoyed me about the font was that I always had a hard time telling the 5 and the 6 apart. I had that problem a lot.

This is true. The better games get, the harder it is to appreciate a true gem from the past. Like, after Silent Hill 4, try and find "D" on PSone. It was amazing, and scary as hell, but now... yeah it's ugly, laughable and worthless.
Same goes for Diablo 1 & 2. If you didn't enjoy it when it had amazing graphics, maybe you won't appreciate it now? Hexatona is right.

I think Im finally getting the hang of the game now that I found a class I actually like : A trap assassin.
Barbarian is boring as shit early levels because the only ability you have access to is lame mundane things like "JUMP!" and "BASH!"

Barbarian is my favorite class to play simply because of the versatility of his builds - Facepuncher (Bash/Concentrate/War Cry), Kite-Tank (Double Throw/Leap Attack/Increased Speed), Support (Battle Orders/Shout/Grim Ward/Howl), and Debuffer (Battle Cry/Taunt).
My favorite part of the class, and the main reason I support it so zealously, is because of the ease with which you can blend these roles. My latest barb uses War Cry, Grim Ward, and Taunt to hold enemies off of me but keep them close enough to murderize.
But yeah, getting past those first few levels is a complete bitch as a Barbarian. ;(

It does sound like a lot of fun later on. I was trying to make a whirlwind barbarian but it's just so tedious early game walking around clicking through giant hordes of enemies.
On the other hand, with my assassin I drop a shock trap on the floor and watch enemies fry themselves. It's also fun watching sparks fly out randomly due to me stacking equipment that has a 10% chance to cast charged bolt (or something).
Had a fun multiplayer game tonight, managed to find something called a Gull Dagger.
