kill quest
Kill the monster!

rescue / escort quest
Get to and safely bring back or escort someone.

fetch quest
Find an item, weapon or key and bring it to someone or something.

discovery quest
Find a person, place or thing.

escape quest
You are captured and must escape. Actually this might be a discovery quest, discover the exit.
I think it entirely depends on the mechanics within the game itself. For example, if you were playing a game similar to Harvest Moon, I don't think you'd find yourself having to complete a Kill quest. There would be more "successfully harvest X crops this season", or "raise X livestock".

But regardless, its the stuff inbetween or around the objective that makes the game fun. WHY are you killing the monster? How do you kill it? What trials/dungeons do you have to go through to reach said monster?
A variant of the escort quest could be the defend quest. (defend a certain location against attack, on a time limit or other trigger)

And then the fetch quest variant of collection. Where you essentially collect something (pokemon, crops, livestock)

I'm guessing that rescue and fetch is pretty much the same quest actually. As is discovery and escape so we're down to three proper quest types.
Trade quest = fetch quest.

Defend quest = escort.
Defend area quest = kill the monster.

Depending on how the game is set up, rescue is not fetch. Rescue adds them to your party.
Grab a normal six-sided die and start The Lazy Quest-o-matic. Make two rolls, and apply the results as below:

First Roll:
If Roll is: The action of the quest is to:
1 Liberate/Recover/Intercept
2 Destroy/Kill
3 Guard/Defend
4 Transport/Escort/Journey To
5 Create/Build/Summon
6 Gather Information About

Second Roll:
If Roll is: The object of the quest is:
1 Item
2 NPC
3 Message/Data
4 Secret or Dangerous Location
5 Magical Equipment/Technology
6 Monster

What would a Diplomacy style quest come under, including negotiations seems like it'd be a combination of multiple quests, but not sure.
Technically discovery. You would need to find the person or place.

I would say rescue is always fetch or discovery. I still think there's only three basic quest types. (Fetch, Kill, Discovery)
I would say that there's really only one kind of quest: do something.

Seriously though, you can easily simplify the number of different quests to a small number. I see that people disagree with how small the number would be, but nobody seems to disagree that there really isn't so many different quests. However, I don't think that's such a bad thing, just think of how many great games there are whose concept is "defeat the enemy."
The best thing to remember about quests is that although there are 3-5 different types, depending on the details two 'fetch' quests can feel completely different. Details make a quest either awesome or boring.
You are drawing all of those from WoW, at least the terminology.
