I should hire someone to pinch me every time I describe something using the words "interesting" or "good" or "fine" or any word as equally boring.

Interesting is a nice long word that you can draw out while you think of a proper answer.
Yeah, I do that a lot myself XD I use the word a lot in real life, but I've never considered it bad to do so, especially if it's a prelude to my thoughts on what makes me interested.
I tend to use it to flummox people. I just say 'Hmmm, interesting' and then walk away. They have no idea in what light I'm using the word.

What an interesting thought process. It's a good idea to expand your vocabulary. Now that you've come to that realization, you should be fine.

You could always use "absolutely fascinating", "considerably decent", and "quite satisfactory" instead.
Just describe everything as "luscious~". You'll go far in life, my luscious~ friends.

Yeah? Well try finding things to say about games when reviewing them for a competition. So many 'This game was/the gameplay was/the concept was interesting. Graphics looked/music was/plot was pretty/kinda/quite decent/good' and the like. >.<;

IDK, there are plenty of contexts where they're perfectly appropriate. Maybe not if you don't go on to elaborate, but there's no real sin in using a "boring" word that carries the meaning you need.
English is an interesting language, in that is has the capacity of all these synonymous words; so many other languages just use one or two words for a meaning, and everyone's absolutely fine with that. But in English, we feel this need to have a hugeass vocabulary and use unusual words to sound not-boring.
tldr- Just use the word that means what you're trying to say, because the message is more important than the delivery.
