Cool to see someone doing a soft launch on itch.io before hitting Steam, I was planning on doing the same thing. Itd be great to have a blog later about how that goes down as its not something I have seen talked about much but I can see it becoming a popular distribution strategy down the road.

Yeah, this would be a good idea! It's been very nice so far, though people will still continuously ask for Steam release dates, but they usually understand when you explain it to them nicely. I do want to make a blog detailing this since it's a very new thing to us as well.
