Windows 7 Ultimate doesn't provide much over Professional or Enterprise.

I'd really like to get rid of LockeZ. His play style is way too unpredictable. He's always like this too. If he ran a country, he'd just kill and imprison people at random until crime stopped.

Compared to Professional, Windows 7 Ultimate comes with a useless program called BitLocker, has multiple languages and can switch between them freely, and can run Linux apps. That's not worth paying for unless you have a relative who doesn't speak English who you share a computer with, but it's worth pirating!
Ultimate is actually 100% identical to Enterprise, though. The only difference is that Enterprise is a bulk license given to businesses.

While there's a lot to compare between Windows 7 Professional and Ultimate, two of the most important differences to the average end-user would be:
BitLocker Drive Encryption. Windows 7 Ultimate allows usage of BitLocker to encrypt the entire contents of internal and external HDDs; very handy if you want to keep your data safe, like for example if you travel a lot and want to keep your data confidential in case your computer or HDD is stolen.
Multilingual User Interface. Windows 7 Ultimate allows users to choose, download, and install up to a total of 37 languages for Windows. For example, a user could download and install a language pack for Japanese onto an English copy of Windows 7 and use a Japanese GUI instead of the default English.
There's also other stuff like booting off of VHDs, but those usually don't concern the average end-user.
Like I said before, I grabbed Windows 7 Ultimate because I wanted everything Windows 7 has to offer (regardless of whether I use them), plus I liked the idea of being able to switch between English and Japanese GUIs freely. For most people though, Windows 7 Professional usually suffices.

7 Ultimate can NOT run Linux (or OS X, or BSD, or any Unix derivative) apps, really. It includes Subsystems for Posix/Windows Services for Unix (which is free to download anyway). The main advantage of having it as far as I can tell is that it means you can do filesharing with Linux or Mac computers with slightly less trouble. There are more things it does (it makes MingW slightly easier to use without Msys--I do use it for that), but you cannot run Linux programs with it, and it does not help you do so, except if you are trying to compile them from source, and they are basically Windows compatible already.
Enterprise (as far as I have experienced) is an improvement over professional in that you can deal more with VHD files (that's nice if you want to clone your hard drive, especially since you can resize VHD files, unlike in Professional, to fit a different sized disk). But there's no simple way for an individual to get Enterprise.
Enterprise (and maybe pro?) also lacks parental controls, I believe, which Ultimate has.
Enterprise (as far as I have experienced) is an improvement over professional in that you can deal more with VHD files (that's nice if you want to clone your hard drive, especially since you can resize VHD files, unlike in Professional, to fit a different sized disk). But there's no simple way for an individual to get Enterprise.

I have a few small issues with Windows 8 at the moment.
- When playing my VX Ace game in full screen, it lags so much like if my laptop is outdated. This doesn't happen when playing in Window mode.
- The colors of the screen are not as vivid and sharp as my desktop.
- It is kinda annoying when I click on a picture, it doesn't tell me what size the picture is on the status bar.
- I still can't figure out how to install custom themes yet, beside the sound and the background pictures.
Does anyone know how to fix these problems ? :D

Not assuming any patches for VXA, the best answer for now would be to downgrade to Windows 7 or prior.

Also, seconding Classic Shell. It is an absolute lifesaver.

Perhaps try installing Classic Shell? Besides having a start menu, it also allows you to modify the behavior of WindowsFile Explorer in a lot of ways.
I do have Classic Shell already, but it doesn't display what size the image is. :P

Possible driver problems and a most definitive problem with UEFI Secure Boot that I went over earlier in the topic. Windows 7 will probably run, but I will prepare for some bumps along the road if you choose to downgrade.
I don't know much about this, so I just increase the saturation. Anything else you would recommended ? ;)
Increasing the saturation is a dirty but quick way to make the colors look better, but I would take the time to fiddle with contrast, brightness, and saturation to get the colors just right if that's possible.
Use both realistic photos (with accurate colors) and non-realistic pictures like anime and cartoons to use as rules of measurement. Graphics of the former will be useful to gauge overall color shades while graphics of the latter will be useful to gauge whether certain shades of color are too weak or too strong.
Simply amping just the saturation tends to make some shades of color bleed out; from my personal experience, the color red is especially bad with being too strong and bleeding out with just straight up saturation buffs.
