I have seen like 5 animes (Astroboy, some of Pokemon, some DBZ, Yugio (sp?), and Berserk).

I recommend Berserk and Astroboy.

EDIT:
seriously, the opening episode of Astroby is surprisingly dark.
I really like the movie counterparts of those shows.
The anime adaption of Love Hina does a pretty good job overall. There's a lot of filler to it, but it's still very entertaining. There's also a few holiday specials with some nice character development, and Love Hina Again(which continues and concludes the story).

As a fan of Love Hina, you might also like Ouran Highschool Host Club. It's got a certain charm to it, and I thought the english dub was done pretty well, if you prefer dubs.

Paranoia Agent is one of my personal favorites. It's somewhat of a mystery/psychological thriller with it's fair share of humor. First half is somewhat standard, but it just gets crazier and crazier as it goes on.

Hellsing is another great one - The "original" series(which follows part of the manga but breaks away) is decent enough and sits at a cozy 13 episodes. I almost prefer it to the OVA just because of the awesome music. On that note, there's also the OVA, which has better animation, improved character development and actually follows the manga. Can't go wrong with either one, really.

Most of the others I'd suggest have already been mentioned by others. I've got a box of anime boxsets stashed away somewhere...I'll dig it up later and see if I can pull a few more recommendations from it.
If you like a psychological thriller then watch mirai nikki,higurashi no naku koro ni is also good psychological one warning may contain blood and gore in both animes.Oh and it would be preffered to get the dvd versions of these anime for uncensored version
If you're looking for one of the best told stories and enjoy a very dark and serious story, You can't go wrong with Puella Magi Madoka Magica. Best anime I've ever watched. (12 episodes long BTW).

Just don't judge it on the first 2 episodes. After the 3rd one, that's when things REALLY start to get amazing.

If you want a mind blowing time travel story that goes from funny and lighthearted to serious and kickass, Steins Gate is amazing. (20-ish episodes). Word of warning, once you hit the halfway point, you will not want to stop. I've had friends unable to stop watching until they ended the anime, even though they had an exam the next day, that's how into it they got. >_>

And if you're looking for a hilarious lighthearted anime with a good story, filled with tons of random fanservice and sexual humor, with a finale that's WAY too awesome for what the show deserved, Demon King Daimo is the best. (plot is about a guy who goes to a magicla school, only to find out that his predicted future Occupation is Demon King. which leads to half the school trying to kill him, and no matter how much good he does, it just makes things worse.) I seriously loved the hell out of that anime for some reason I can't explain. I think it's the fact that the plot had a lot of genuine moments of greatness, only for it to be randomly interrupted by more silly fanservice humor, only for things to suddenly get awesome out of nowhere. XD (12 episodes)
Monster is really good! I would say if you like Death Note you'll probably like it.

Gunslinger Girls - Not my style, too serious and very slowed paced but it is actually very well made, recommended if you like Serial Experiments Lain
Higurashi - Watch cute girls murdering each other... oh it actually has an interesting plot.

Welcome to the NHK - Simple but and amazing story about a Hikkimori, a realistic satire with dark humor and the drama parts are just as outstanding
Planetes - Space Opera with a lot of things, comedy, drama, politics, suspense, hard sci - fy, deals with ethics matters, I practically recommend this to everybody.
5 centimeters per second - a very mature and realistic movie about love.
Kaiba - Animation looks for children but it is actually a very beautiful and harsh story full with actual good simbolism
Usagi Drop - Very cute and for all family, a story about how a man raise a girl
Serial Experiments Lain - Slow paced, but really deep psycological matters.
Cross Game - It suppose to be about baseball but most of it is very good slice of life, I was told that I was going to be hook from the beggining, they didn't lie to me.
Baccano! - I would say this is like Quentin Tarantino in Anime
Durara!! - If you liked Baccano you might like Durara that is in the same setting but not technically a sequel.
La Maison en Petits Cubes - A japanese short-film, just lovely.
The girl who leapt through time - very light but is really entertaining.
Hyouka - School detectives resolving... who left the dogs out and non-relevant cases, surprisingly very entertaining.
Spice & Wolf - Economics, Romance and Medieval Times.
Panty & Stocking - If you like south park humor, you might me interesting in this occidental animation made by japanese
Mawaru Penguin Drum - Just Random and funny but at the same time a very serious story with lots of symbolism.
Bakemonogatari - Great Fan-service with cool use of animation, but not much out of that.
This is a list of anime that I have "finished" (meaning they actually have an ending of sorts). I enjoyed watching all of them (though some more than others). I think all of them are worth the time IMO.

Avatar: The Last Airbender - basically a western anime, looks like a cartoon for kids but is actually quite mature and fun to watch
Eureka Seven
Black Rock Shooter - very unique art style, and good story
Chaos Head - Probably the only anime on this list that I didn't enjoy THAT much, but has an interesting story. And one very disturbing scene, ouch.
Claymore - Very dark and bloody, with some awesome fights
Code Geass - Mech fights, awesome story, and one of the most memorable endings imho. Lelouch vi Britannia!!!
Cowboy Bebop - older one, but absolutely and thoroughly great
Darker Than Black - enjoyed the first season a lot, lost interest in the second, but the first is definitely worth watching
Death Note - everybody should watch it, nuff said
Devil May Cry - my most favourite version of Dante, badass pizza/strawberry sundae lover with a lot of demon slaying and solid plot
Full Metal Alchemist/Brotherhood - not sure which version of the anime I like more, they are both awesome
Gintama - 200+ episodes, filled with 4th wall breaking, awesome humor and anime/gaming references.Got a lot of laughs out of this one.
Hellsing - one of the scariest and most badass characters ever
High School of the Dead - Boobs and zombies, do you need more?
Kiba - The first anime I ever finished as far as I remember, nothing spectacular, but very enjoyable
Kino's Journey - You must watch this. A story about a traveller who goes from country to country, always staying for only 3 days. Incredible soundtrack, and Kino is one of the best characters I ever saw.
Lucky Star - Slice of life, fun, short, very enjoyable
Puella Magi Madoka Magica - As has been said, after episode 3, it goes from average to "OH CRAP THIS IS AWESOME". Watch it.

Steins's Gate - Awesome take on time travelling, the story is... incredible, to say the least. Unique main character, and Mayuri... just see for yourself. El psy conguro.
Sword Art Online - beautiful animation, beautiful love story, and a must-see for any RPG gamer (the characters are stuck in an MMO where death ingame means death in RL, and the only way out is by beating the 100 floor dungeon)


Attack on Titan - I didn't believe the hype, but I decided to give it a try. I haven't finished it yet, but it has been one hell of a ride so far. As good (or better) as people say. Also quite new, so the animation is top-notch.

And as far as movies go, you can't go wrong with any Miyazaki/Studio Ghibli movies, like Princess Mononoke, Spirited Away, Kiki's Delivery Service, My Neighbour Totoro and so on. Akira, Ghost in the Shell and Grave of the Fireflies deserve a special mention as well.

Anime like Naruto and One Piece gave me hundreds of hours of entertainment, but I recently stopped watching them, they just never end (One Piece is 600+ episodes, that is 200 hours of my life, wow). I currently enjoy anime that are shorter and, more importantly, have an ending, becasue I like closure and don't have as much free time as I used to have.
With that said, One Piece has one hell of a story and lots of fun adventures, and almost no filler episodes whatsoever. And it still manages to be interesting after all this time, which is inredible imho.

(Dis)honorable mention - Bleach. Great fighting anime that is plagued by fillers. GOD. DAMN. EVERYWHERE. They don't have filler episodes, they have whole filler ARCS! Seriously. I stopped watching after they basically defeated the main villain, it felt like the show should have ended there.

I watched a bunch of Spice & Wolf this weekend and it's super adorable, so I'll second that one :)
Thank you for all of the suggestions. We decided to start with Sword Art Online and we're loving it so far - exactly what we needed! Got a lot of things we could potentially watch afterwards too from your replies.
