Have you made a personal challenge before? For example, beating FF1 with 4 white mages, or using only one character, I like this sort of challenges because it makes you think others ways to beat a boss or things like that

I have beaten FF1 with 4 Blacks Belts, 4 Warriors, 1 Black Belt and I'm planning on doing a solo Cecil for FF4 (and a solo challenge for FF2 but I'm not sure if it is possible)

I've done a couple of level 1/all one class/solo challenges but I can't remember how any of them turned out to be honest.
I did set a general challenge last year for completing every game I started and not giving up midway, but it was broken by FFX HD and GTA V :/ Since then I have not been able to commit long-term to any other games.

I tried to get all collectibles (without relying on a guide, which is what I usually do) in Brutal Legend in one play-through but was beaten by an impossible to find serpent statue. One. Out of 120 of the goddamned things.

Also recently I was trying to have a "legacy" town in the Sims 3, but that was ended when I somehow got the bug that disables aging in all families. I panicked and tried to fix one family, accidentally deleted all their family history, then in disgust burned them all to death.

Oh, one that did work out was in Fallout 3. I wanted the ghoul mask & dartgun as soon as possible in relation to levelling so I did not have to face reaver ghouls or able-bodied deathclaws. Probably one of the only games I can think of where I strategized that much regarding money and resources.

I beat Paper Mario: The Thousand Year Door using only the Jump command on Mario. Usually you need the Hammer command for a lot of the enemies, but with the right Badge set up you can do everything by jumping. I've been meaning to do a Hammer only run as well, and to try one or the other in the first game.

I did a 100% clear on Metroid Prime, and also Twilight Princess (save for one fucking poe. ONE.)

I also did a 3 Heart Zora Tunic run of Twilight Princess. The Zora Tunic makes you take double damaged from fire and ice, so that was really fun. Snowpeak Ruins is the best part of the run, since everything in there kills you in one hit with the Zora Tunic on.

I recently tried to 100% Mario 64, but I only got to about 98 stars before I gave up. The last few worlds just aren't worth it.

I've also done 100% clears of both Banjo-Kazooie and Banjo-Tooie, but that's not as special because I don't know how to play those games without getting 100% anymore.
I few particular that comes to mind.

The Legend of Zelda: A Link Between Worlds
3-heart Hero-mode minimalist challenge. No upgrades to weapons/armor or getting items you can clear game without. Almost anything one-shots you past the first dungeon. So many resets in places...

Metroid Prime 3: Corruption
100% Hyper Mode-difficulty clear. Not very specific, but f**k that bullshit final part of the game. I'm never redoing that again.

Mega Man Zero 2-4
Cleared with 100pts on all missions.

Metroid Fusion
Complete 1% run.
The Legend of Zelda: Ocarina of Time
Minimalist run (no unnecessary equipment pickups, including heart containers).

The Legend of Zelda: The Wind Waker
Use the sword as little as possible (use other equipment and environmental objects instead).

Mega Man 9
Not exactly a personal challenge since there was an achievement for it, but I managed the Mr. Perfect challenge (no damage). It's easier than it sounds since you can save between stages up until Dr. Wily's castle, but that's where the toughest challenges are, and it's a pretty decent slog still.
I accidentally did a no-Bank run of the majority of Mother 3. I didn't realize that beating enemies put money in the frog banks, so I subsisted purely on selling items/equipment and occasional NPC gifts until the Masked Man fight of chapter 7 (I think. Its the last fight before going New Pork City). I pretty much steamrolled the rest of the game after that. It was... interesting that way.

I very rarely finish games, and so even more rarely replay them while remembering enough of them to attempt anything like this. The only other thing I can think of is that I very briefly did some time trials of Sonic Adventure 2 speed stages to see how fast I can complete the stages while still getting A ranks, which is more difficult than it sounds since a lot of your points come from homing attack chains that are faster to just skip.

Oh, and I guess once I was really bored one day and decided to see how much I could get through stages as Sonic in Sonic Advance by just somersaulting and using the backflip out of it in place of regular running and jumping.
I did the 3 heart challenge on both Wind Waker and Twilight Princess. I might try the same for Majora's Mask 3d.

I'd really like to get rid of LockeZ. His play style is way too unpredictable. He's always like this too. If he ran a country, he'd just kill and imprison people at random until crime stopped.

I expected less 3-hearts Zelda runs and more Nuzlocke in this thread, to be honest.

I've done stuff like this in a lot of games, sometimes on my first playthrough. Decided not to use the auction house or multiplayer mode at all in Diablo 3 for example. It was just more fun. Only usually do this my first playthrough when there are systems in the game that I just actively hate; otherwise my completionism wins out over my desire for challenge.

Decided to make a World of Warcraft character one time that I played completely solo - no auction house, no interaction with other characters, and no interaction with my alts. It was certainly far more fun than I've had leveling up in World of Warcraft any other time since vanilla.

I tried nuzlocke. I got to about half way in Pokemon soul silver and quit out of sheer boredom.
Tried similar things in other games, always ends in boredom. The problem mostly is I barely have the time or attention for a game regularly. So challenges are a bit much.
