CloseEdited my action to be more specific with my way of attack. Also, Wes, it says in the thing that only furies can affect them, so metal furies would probably work. So if your spear is your fury, it should work! Better wait for clarification though.

This isn't any annoyed sarcasm or anything, I just assumed the door being torn asunder and howling wind furies barging in trying to kill people would be noticed by everyone. If this isn't the case, then it would make sense in Gala's character, thinking no one could not notice to this sudden assault disturbing the relaxed atmosphere, regardless if they were justly pre-occupied.
and it wasn't really clear if I saw one of those Windmanes already.

Metal furieas aren't useful in this particular situation, at least not yet, there's an unlockable ability where metal furies can hurt any type of fury, but you don't have that yet.
Okay, I here's my edited dialogue, so Seiromem's dialogue (his action of course, still goes) for before doesn't count. IT DOESN'T COUNT! XD

Those guys were testing my patience, and I had no intention of getting on a fight. I was about to tell them to leave me alone, when suddenly, chaos started.
Everything happened really quick. One moment, the Windmanes appeared and started destroying everything, and in other moment, a girl tosses me a salt shaker (right?) prompting me to throw the salt at them. Which I proceed to do, in addition to:
"Aviere! Defend me against these furies!"

Turn 1:
"Guys! You heard that? We have to go see what's going on!" "Aviere! Defend me against these furies!"10! 5
"Uh guys, I love that I'm so popular and all, but seems we need to get to work. Might want to do that, we can pick this up later." Reize offers.
"Yeah, we don't need the Captain breathing down our necks, let's go boys."
Aviere! I could use your help!"
Nothing happens, then Reize remembers that he'd better get a source of water for Aviere to form from. Throwing salt along the way, some of it slapping him in the face. But still ripping apart some windmanes.
"Let's tear 'em up!" Gala dives into the fray to tear the windmanes apart with her own wind fury.16!
"Garuda, Let's do this. Tear'em apart!"
The air churns in front of you and forms into a four winged golden eagle. It speeds into the mess of spinning air. Garuda's form starts to flicker before the air seems to suck away for a second, a large chunk of windmanes disappearing with it! garuda also lets you know that there are a total of 556 windmanes left!
leaps onto the table and begins firing ruthlessly into the crowd of opponents filing into the building. he screams to nearby allies to flip over some tables to provide a safer area to hide and protect the wounded that are bound to pile up. summons zephyr and sends him to attack the windmanes9! 11!
Blaine jumps into action, he jumps onto a table, stumbles a bit and begins firing into the crowd of windmanes, hitting nothing, due to them being made of air! At a loss, he orders others to turn over tables to provide a little cover, which is followed. Then Blaine hears Ademar's order and follows, willing Zephyr to take form and attack. Zephyr streaks in and soon starts to tangle with the windmanes getting the best of the fights, but not quite as impressively as Garuda.
"Everyone! Summon your furies and take them out, now!" Might as well summon my Fire fury as well. I'll order him to attack the Windmanes closest to us. 3!
"Everyone! We need to focus our attacks using our furies! It's the only way to win this!"
With practiced efficiency you order your fire fury to come forth and attack. It goes in, and starts blazing the windmanes, burning them away! However its fire goes out of control and fifty legionnares are burned to a crisp! that leaves 100 legionnares, which the fire is spreading towards more, ready to consume the whole legion and windmanes!

"They always go for the difficult way." Alex says before quickly opening all of the salt shakers and passing them out, and using the whipping wind to make the salt fly through the air, more windmanes dissipate with horrifying shrieks!

Reize: Relieved to have the legionnares off of his back,but not atttacking yet Throwing salt and in search of water for Aviere.

screams to the crowd of soldiers rushing around to do something about the fires that are beginning roar nearby. blaine then hops of the table and runs to find someone with a water fury.

2) Is there a close source of dirt and/or branches to summon my other fury?
3) I spent energy even though I didn't actually summoned the fury!?

The water thing? Not if you don't want to, also with the door open you have access to enough wilderness to summon Zeon, yes.
I'd better have Garuda go to and assault the side-lines, don't want to get surrounded. Gala thinks.

Is there any source of water anywhere that people with Water furies can use? Hell, just water in general? And uh, I'm sure I can MAKE fire, but can I also make it dissipate?

As a firecrafter, yes you can use your fury to make flames dissipate.
Not much in the way of water inside, there are some pumps outside the great hall though, which is general knowledge since most Steadholts have the same general layout.
