Yeah in games like Fable and KOTOR I'm never evil. Always as good as possible, actually.
In these kind of games, I always play as either REALLY EVIL or REALLY GOOD. Never in-between (but usually evil).
I'm a terribly completionist. I can remember people complaining about how short a game like KOTOR was, but it took me approximately 58 hours. I have a hunger to complete every sidequest, talk to every villager until they repeat themselves and unlock as much as possible. I developed this habit in the PlayStation era when I started working, rationalizing that as a young adult I no longer had time to beat Suikoden start to finish twice in the same day and thus must complete as much as possible the first time around, because I may never have time for a second chance However, this has just caused me to finish less games, especially as they become more complex.
Like someone else said earlier, I cannot bring myself to be evil, even when I try. I tried real hard to be an anti-hero in Mass Effect Jack Bauer style, but despite my best efforts I ended up as a pillar of light.
My worst habit, however, is probably starting up a game, playing it hardcore for a few days, and then not touching it for months. I started Final Fantaxy X in January of 2006 and finished it in December of 2006, playing it in spurts that occured very infrequently.
As of right now I am still working on my same Final Fantasy VIII save from two years ago, my Fable save I started after the 360 launch, my Final Fantasy XII save I started in July of 2007, and many, many others.

My worst habit, however, is probably starting up a game, playing it hardcore for a few days, and then not touching it for months. I started Final Fantaxy X in January of 2006 and finished it in December of 2006, playing it in spurts that occured very infrequently.
As of right now I am still working on my same Final Fantasy VIII save from two years ago, my Fable save I started after the 360 launch, my Final Fantasy XII save I started in July of 2007, and many, many others.
I can never find secret stuff unless they are quite obvious, so whenever I start an RPG, I search for a FAQ and give a quick look over the secrets list, if there is anything interesting like a secret character, secret ending or very interesting iten/spell, I will have a note on how to find those and close said FAQ.
When I am looking for ramdom encounters I walk in certain patterns on the dungeon, bit going along a wall or making drawings in the ground with my paces or find a pillar and keep circling it...
I only use spell (damage, buff or debuff) itens when I am really forced to, otherwise I just sell then for money.
I stop at certain points in the game just to listen to the bgm or look at the map/bg...
In first person or back view games (FPS, Megaman Legends, Gundam Musou, Gundam Omni vs Zaft, Bootfighter Windom...) I kick major ass in one on one battles, but I am instantly owned as long as there is more than one enemy to fight (I have a narrow focus, it is hard to keep track of many elements at once u.u). It happens when there are many elements in the HUD too.

I do this, but even worse I tend to start the game over instead of continuing from my last save. It takes me forever to finish games.
For RPGs I tend to save a lot even if I just fought a battle against weak enemies and also like to escape a dungeon to heal up after making it to the next room/floor (and save while I'm doing so).
When I was playing KOTOR and KOTOR II, I had a set way to do the dialogue system. I had to choose the paths that would reveal the most interesting dialogue that was still considered lightside. This is hard to explain, but I would reset if I followed a dialogue path that caused the text to repeat itself or if it cut the conversation off prematurely. I think I did the same in Jade Empire, to a lesser extent.
Also, as mentioned above, I have a saving issue also. I hate redoing things so I save often. Not sure what the norm is, but IIRC I had over 400 saves for Jade Empire (not 400 seperate save files). I would save after I finished a conversation that had multiple and meaningful choices, for example, after bosses, when entering a new area...
I entirely forgot to mention the habits that regarded real life. I can't seem to start a game without my living room being 100% spotless, and I used to only start the game at "ideal" times like 10:00pm, 10:30pm, 11:00pm, etc... I would patiently wait in for the clock to move otherwise.
Luckily I went to rehab and removed most of my obsessive-compulsive tendecies.

I am very complusive about saving.
I learn a new spell, have to save.
I upgraded my armor, I have to save.
I just finished that particular story event, I have to save.
When I'm grinding, I save every 10-15 minutes. I'm paranoid about losing ANY progress.
I will only grind if it is a save anywhere area. If I can't explore and save right there where I got that or I don't have an exit/teleport thing, then I refuse to grind.
This comes from having my brother come and just turn off games that I was playing when we were younger when he wanted to play something. You have no idea how much I hated that.

Same here. When i have beaten a boss i always look for a save point first and usually save after every battle anyway.
I became like that after playing McGees games...

But yeah, test playing requires a lot of saves, specially to skip cutscenes :P
I do the saving thing, where I'll have just saved, but I save 2 or 3 more times to "make sure".
Also, the very first thing I do in every game is try to find the "edge" for myself. I.E. the ways I can use the system to my advantage. Be it farming specific items for the purpose of getting rich quick, abusing an attack scheme that allows me to finish fights quicker to level up faster, or just plain grinding on small things so that i'll be able to breeze through and catch the story in one fell swoop.
I don't like stopping to level after getting involved in a story, so i'd rather do most of that up front, and then let the story mesmerize me.

I do the same shit in most Grand Theft Auto games, actually, and actively try to avoid killing people or commiting crimes unless it's for a good reason, trying to make the game more realistic by my actions.
The entire appeal of Final Fantasy Tactics for me is creating the weirdest possible (yet most effective) class combinations. In my current game, my "Ramza" is Roland, and is effectively a GUNSLINGER. The one time I ever beat the game, he was a teleporting ninja.
In GTA I do the exact opposite, and go absolutely nuts in my environment. After i've seen enough "regular" killings and stunts, I move onto attempting more elaborate and
"creative" kills and stunts. You can only go so far with drive-by shootings, but drive-by shootings in a tire-less car that is in flames and jumping out at the last second before it blows up, and THEN attempting to shoot things as I fall out? better.
trying every weapon in this mode? oh yeah.
Tactics is by far my favorite of the FF's. I like making my entourage as diverse and crazy as possible! Things like Ninja/Mediator and Squire/Oracle aren't unheard of in my party! Sounds like we play this one the same, heh heh!
Oh yeah, in KOTOR, it's all about the evil for me, at least.
