Setting aside the dangerous implications of this statement, which you've already touched on...
Home cooked meals are way better for calorie counting than anything else in the world. If you know where to shop, you can make sure everything you're putting into your food is low-cal and delicious. My mom and dad lost 50 lbs each just by looking at labels and making their own food more often (and working out)... yeah. And it's delicious, too. I miss home cooked meals for how healthy they can be :(. There's nothing like chicken noodle from scratch as a low-cal meal in the winter.
Calorie counting is good when it isn't an obsession... which it can turn into quickly. But that's an entirely different topic.
I guess this is a good place to check if my routine is as good as I hope. I usually do 40-50 push ups and 80-100 situps every night before I go to sleep (I can do more sit ups but then I usually feel it in the legs instead of my stomach, any ideas on that? Also, I sometimes feel the sit ups in my back instead of in my stomach^^), and I try to do 20 push ups and 80 situps every morning, but motivating myself that early can be hard some times. I've been doing this for about a year now and resultwise I guess it's okay. My arms have gotten slightly bigger and way harder than they were before I started which is nice since my goal isn't really to have huge arms, just keep in shape.
I'm 6.2 feet tall and I weigh about 158.4 - 162.8 pounds (not quite sure cuz I haven't checked in a while).
Any advice is appreciated.

Make sure you are actually using your stomach to do most of the work with situps because it's very easy to slack off and let your back to the work instead if you start going too fast. Slow lifts work best I believe.

So I weighed myself the other day and it might have been because I had my jacket on but I like literally had a heart attack because it seemed like I had gained two pounds.

2 pounds? Go take a crap. Seriously, your weight should flucuate like +/- 3 pounds depending on your hydration levels alone.

Soy milk is not terrible, but should not be used as a complete replacement for other types of milk.
WIP is right, soy milk really isn't all that hot dietary wise. It's certainly not better than actual dairy milk, and there's some studies pending that seem to be leaning on that soy milk actually reduces or inhibits testosterone for men.

Ugh, soy milk! I can't remeber the last time i tasted that, but it was very unpleasant.
im vegetarian and even i try to avoid soy as much as possible. there is a lot of estrogen in it that can screw up your hormones.
a lot of recent studies have suggested too much is really not a good thing.
if you don't like dairy, there is other ways to make milk. i make 'nutmilk' (yes that sounds incredibly dirty), but soaking almonds or seaseme seeds in water overnight, blending then strainging = better than milk stuff :)

There was a program on public radio recently about people who know just barely enough about a topic to start a conversation or enter an argument about it without actually knowing what they are talking about. The most common way people do this is by saying "Yeah but there have been all sorts of studies . . ."

I guess there were a few cases where rats were fed their weight in soy every day and they got a little messed up but you know what that means. You are also disregarding the outrageous longevity of people in cultures that are centered almost entirely around ingesting soy in its many forms.
Also soy milk is pretty gross. It is not something you should drink. Its best use is as an ingredient; in coffee, cereal, or baking for example. It does not mix will with cheese so I keep some dairy milk handy when I am cooking.
