Is there an easy way to convert the Windows game files, so the game could run on Mac and Linux?

Nope. RPG Maker 2k does not support Mac or Linux in any way, shape, or form. The only RPG Makers that do support those outputs are the newest ones MV and MZ. Unite too once that releases, which runs off unity which can export to anything.
