ONE... and ONE only... and it's only Paper Mario, I've tried a fair amount RPG's but I don't have the patience or skill to complete them... I could count LOZ Ocarino Of Time 3D but then again, i've still the masterquest so...
I've not even finished Sacred Stones and it IS my favorite game...

I am not sure if this belongs here (as it is barely an RPG), but the wife and I recently beat the Normal difficulty of Diablo 3.

We haven't really had any motivations to play it on Nightmare yet.

The game uses a weird compression since its data is too big for a PS2 disc, so the PS2 has a hard time loading the game. Even when I first got it, the game had a delayed load at the start up screen and would randomly go to the settings menu since it couldn't load it fast enough. Now, it won't do anything. It always says 'no disc' or whatever.

Not to be rude, but what did you find particularly challenging about the final bosses in some of these games? Kingdom Hearts which I finished when I was around 8-9 or so, was actually down right easy. The only bosses that offer up a challenge are Hades, the two superbosses, and obviously Sephiroth which were all quite fun~ Though Ansem since he's so giglamatically large in size, he's got plenty of ways to whack down his hp. Honestly, just have a fair supply of mega/high potions on you, and your team, as well as guard (and roll for battles where you aren't flying), and curaga on you. Aerora/ga are also lifesavers. The difficulty you choose doesn't really affect gameplay all too much either.

Now, Star Ocean 3's final boss..that I will agree with you, as Luther kicked my ass alot, though that's mostly because I was severely unprepared~ xD

Never had any problems with Rogue Galaxy technically, so can't give any help with that.. :o (The Ghost Ship bonus dungeon is friggin' cool btw, though sadly that's pretty much all there is after finishing the game.)

Final Fantasy X was indeed a change from the series, and I never could into Blitzball, but it was overall a fun experience. Plus, at the time, the graphics were beyond belief to my eyes, especially the gorgeous cut-scenes that Square (Now Square Enix) uses in nearly every game they create.

The Third Age..probably my favorite experience of anything from The Lord of The Rings, though I'm a turn-based rpg fanatic, so it fit perfectly with me, except for the slightly high encounter rate. The final boss Sauron however, was like a slap in the face to me because of just how ridiculously easy that thing was! Ugh, I swear, that thing must have been thinking "Please, destroy me because I'm so pathetic that I just can't find it in me to kill such powerful warriors!" Did Sauron even have any attacks at all? Oh well, I can't remember, just that he was in no way fit to serve as a final boss..unless of course by last boss you meant the Evil campaign, in which case I fully agree with you on the difficulty.
With both Kingdom Hearts and Third Age, I got to the final bit after fighting something like five consecutive battles, lost on the last one and didn't feel like fighting the previous ones again. I only tried the final part of each one once, and haven't tried again in several years.

I tried fighting Gabriel and Luther in SO2 and 3 repeatedly and lost badly every single time. Aside from that, SO2's storyline was so aggravating that I had no motivation to grind so I could beat him.

I did complete Rogue Galaxy, and the Ghost Ship, decided to go ahead and collect alot of crap to get the weapons, then my game glitched up around the 99 hour, etc.

On a sidenote, Yiazmat is the only thing I didn't bother with in XII. There's no way I'm spending time on that guy...0mega and Hell Wyrm alone both took an hour each...in fact, Yiazmat is so important to me, I figured why not "borrow" him. I'm sure some people will love that >:3
