Doctor Doom is an armored sorcerer who can never remove that armor. Steel/Fairy or Steel/Dark (is Dark/Steel/Fairy an option?) is pretty much a given.

That's a possibility, but psychic doesn't quite have the supernatural implications that fairy does.
Well Abra Kadabra and Alakazam are Psychic type and they definitely were inspired by magic words so you could argue that Psychic in at least Pokemon terms fits in with supernatural.
If Pokemon allowed for more than two types, Superman could be Fighting/Flying/Fire/Ice/Fairy My reasons for those three extra types: Heat Vision could be a fire type move also Superman gets his power from the sun. His freeze breath is Ice type. And there was that one movie he threw the letter S at his enemy that seems like a Fairy move lol.
I could even see Superman being Normal/Flying just because he can kinda do it all or at least has the ability too.

He would be fire cause of Laser Eyes, Fighting cause he fights bad guys and stuff. Flying because... you know... HE FLIES. :P He would be Ice cause of frost breath, Psychic because of his night vision, X ray vision, and mind reading. He is rock because he is from a giant rock and he is weak to rocks. lol such pwnage. Killed by a rock. lol.

Also did you know that if batman and superman fought batman would kick superman's butt? DON'T mention the terrible piece of garbage that BvS was. Just don't. Batman always carries a kryponite dagger so if superman turns on him batman can instantly kill him.

I'd really like to get rid of LockeZ. His play style is way too unpredictable. He's always like this too. If he ran a country, he'd just kill and imprison people at random until crime stopped.

Types are about defensive properties, anyway. I'd say he's fighting/steel, but can use moves of all those other types. That doesn't make him weak to rock any more but, like, whatever, it's not as though normal rocks hurt him. Boulder Toss doesn't hurt Superman. Only magic (psychic) does. And moon stones cause him to devolve into Normalman.

Yeah, I mentioned Steel earlier, but somehow Superman isn't steel. But hey, Steel gets to be steel, and he's just some guy in a suit!
Anyway, just make Superman a Legendary Dragon and give him whatever moves suit.
