Whenever I select the RPG_RT file the hide hp and level, as well as other options, are unclickable:

Yes, you're missing something. The options you have available are based on the RPG_RT version you provide. For example: RPG Maker 2000 will allow all of the options to be changed, however-- if you use 2k3 your options are severely limited. Unfortunately, it seems you're using 2k3, so there isn't much that this software can do for you.
