Tales of Symphonia- First half of the final battle. I loved how they were actually arguing during in the fight.

The Cyborg Ninja! First he has a sword then he puts it away and faces you with his fists

And personally I thought the Psycho Mantis fight was engaging. Having to switch controllers is a pretty odd way to beat a boss!

Definatley one hell of a way though, even before you fight him he knows all the Konami games you have on your memory card.

Blue V.S Green
I quite enjoyed a lot of the boss fights from Crisis Core, except for the last boss Genesis. Was far too easy. The summons were impressive as well.
Boss fights are often my favorite part of videogames, but for me, Bomberman 64 takes the cake. You had to really know what you're doing just to defeat them, but to get a perfect for the fight, you had to figure out how to get the four gold cards out of each of them and still beat them within a time limit! They were more like puzzles than battles, and they all rocked!
Chrono Trigger had really memorable bosses, too. They did a good job making them so they weren't completely straightforward.

Nobody gave Metroid some love.
I thought the bosses in Metroid Prime were very well done. In fact, almost all the Metroid games have very challenging(and unique) boss battles. There are so many of them I can't even name them all(I'm sure most will know what I'm talking about if they've played Metroid).

Speaking of Bomberman, I liked that one boss from Bomberman Generation for the Gamecube. The silver hawk guy, he had the best death line "Even roses are beautiful when they scatter"

Although the game was shunned by many people, I enjoyed the final boss of Perfect Dark Zero. It was fun dodging the massive pillars he threw at you. I only wish he threw more.
FFX - When you fight Jecht. It's really fun when you are all maxed out and the boss fights are really easy.
Warriors Orochi - All stories. When Orochi is alone and your fellow allies are juggling him bad. Then they all die and now it's 1 v 1.
Maplestory - Zakum is really fun to pwn.
Dark Alliance - Easy last boss.

Tales Of Symphonia: the battle with Kratos/Zelos depending on who you chose.
Pokemon Myster Dungeon: the battle with mewtwo, almost impossibale
And Pokemon G/S/C: The elite Four.

Zelda: Ocarina of Time: Dark Link, using the Master Sword ONLY - Hes a hella lot more dangerous then the entire Gannon fight when you don't have big Goron and the more hearts you have the more hes has making it a great fight! Having to rely solely on your sword skill made it pretty intense.
