WHAT ARE SOME AWESOME PS2 GAMES I MIGHT HAVE MISSED?

Okami, the Xenosaga series (or just 1 and 3), and Odin Sphere are my suggestions. If you're still taking them.
So friggin' many, I still have about 10 PS2 JRPGs that I own but haven't played yet. There's just so much gold from the PS2 era across all genres. In fact, the only games I've really liked from the current generation of consoles are Yakuza 3+4, Dead Space 1+2, Xenoblade Chronicles, Mas Effect trilogy... that's probably it. I'll give the new Tales of games a chance eventually as well.
I actually bought a PS2 in February 2012 and still play it regularly. Silly amount of great games.
Star Ocean: Till the End of Time is ridiculously under-rated and is definitely one of the better RPGs on the PS2.
I also loved the two Persona games and MGS2/3, although I doubt you haven't played them already...

Star ocean 3 was great...way better than star ocean 4 on the ps3 (imo). Same thing happened with grandia...where grandia 2 was good, but then grandia 3 was kinda meh.
But yeah, there are far too many great ps2 games to list. I had a whole collection of ps2 games (until I went to a school to learn more about my trade...and my roommate broke it when I was out sick). In fact, I probably had at least 50 great ps2 games, if not more.
A really obscure game (I think) is the langrisser series, with langrisser 3 being a ps2 game if you like turn based strategies. You may have to emulate this one though, because an english us version never came out. So worth it if you can find a way to play it though.

Whatever happened to Brock Lesnar?
I really liked WWF and WWE games back then. I believe many stray away from them because they're "license-games". Good 2-player fun :D Brock Lesnar went to real fighting in UFC and was actually world champion there (dunno how he is these days, I hear he went back to wrestling?)

God Hand. On the ps store for like 5-10 bucks I believe.
You'll have such a love hate relationship with it.
I actually used to have God Hand but it just didn't do it for me. Just didn't find it that enjoyable even though everyone raves about it.

Siren and DBZ Budokai 3; last 2 from me~ :3
These 2 are actually on my personal list as well ;) I was gonna get Siren and DBZ Infinite World actually.
Mana Khemia 1 & 2 (2 has a Hard Mode so it has a little more replay value, although both have several endings and extra bosses. You actually have to play 2 a minimum of two times to be able to actually complete the game), Shin Megami Tensei, Persona, and Rogue Galaxy are my recommendations. If you want something REALLY unique, you can probably find a copy of Mr. Mosquito for a dollar.

I missed the entire PS1 and PS2 generation. I probably didn't miss much...
For the most part I didn't play much ps2, but their are quite a few good ps1 games.

Radiata Stories is a really good game that I don't think many people played. There's two path ways you can take in the game and it had over 175 characters (Even though I only ended up recruiting around 30). I really did not understand how to recruit most characters.
.Hack is also a great series (GU is better than the original though).

I liked .Hack but it got unreasonably hard by disc two. The top armors from game one, were pretty much junk, and you had crazy bugged zones everywhere.
LockeZ
I'd really like to get rid of LockeZ. His play style is way too unpredictable. He's always like this too. If he ran a country, he'd just kill and imprison people at random until crime stopped.

La Pucelle and Makai Kingdom are Nippon Ichi tactical RPGs that I only recommend if you loved the shit out of the Disgaea games and just want more Disgaea and are sad you ran out. La Pucelle is like a more primitive proto-Disgaea, and Makai Kingdom is a low-budget knock-off of Disgaea.
Phantom Brave is also a Nippon Ichi tactical RPG, except instead of trying to be Disgaea it tries to be innovative and fun, and the end result is really different but really incredible. It also has a great soundtrack!
You would probably like Romancing Saga: Minstrel Song if you liked SaGa Frontier for the PSX, because it's very similar. If you haven't played any SaGa games, you'll probably find it hard to get into, though. It has a lot of really complex stuff that it just tosses you into all at once, and it's an open world game with very little direction (once you reach the world map, you instantly have a list of like 100+ choices of towns and dungeons you can move freely between).
Don't play Unlimited Saga under any circumstances. It is the worst video game on the PS2, hands down. It might be worse than Superman 64.
And here's my non-RPG collection, in no particular order since no two games are in the same genre:

It is a platform action game that only has four stages, and each lasts maybe five minutes tops if you don't die. (Though you will probably spend a good 10-15 hours dying.)
Dirge of Cerberus is terrible, do not play it. Even (especially) if you really like FF7's characters and plot.
The other three I'm sure you're already familiar with. If you haven't played them by now, you probably made a conscious decision not to.

Ooooh I love La Pucelle. I've played Phantom Brave, for the PSP. I kinda hated it due to the whole "recruits drop out after a few turns" thing.
Okage is an interesting game. You play as a shadow-possessed human, who does good deeds because the evil lord possessing him can't stand to be shown up by other evil lords.
Eternal Poison is a good SRPG, with the ability to destroy your allies (they're summons) for powerups. Or summon them in battle. But I found the summons a bit too short, and the monster "refining" a bit inefficient (about 5 monsters to make some powerup. It's pretty good for someone who likes gothic style though.
You actually played Dragon Quarter? I stopped wanted to buy it after hearing the gameplay overview by Amazon reviewers.

BoF: Dragon Quarter is crazy. If you like hard games, you'll enjoy it. All the things it does sound on paper like they would be so terrible and ruin the game, but with the way they put it together, the end result is actually unbelievably compelling. They took the "resource management" aspect of dungeons in older RPGs like Dragon Warrior, and translated that into the core of the entire game, with the whole thing being one single long test of endurance.
And then they were like, "These ideas don't work in a normal RPG. There's a reason no one ever does this stuff. To make this work we're going to have to not do a lot of things that every other video game does, we're going to practically have to invent a new genre of games." And then their awesome producer, instead of predictably saying, "No, make the same game everyone else is making, because I know that'll sell," said "Eh, okay, give it a shot."
I would probably not want them to make more games like BoF5, but I am definitely glad they made it the way they did. The biggest problem with it is that all the other BoF games were totally generic carbon copy JRPGs, so people were confused that this one had changed genres.
Don't go into it expecting a JRPG. Go into it expecting some bizarre combination of a roguelike, a massive resource-usage endurance test, and a tactical RPG.

Luckily they included the option to switch to the original Japanese, which you'd be wanting to do anyway as the battle voices are still in Japanese. (Can you imagine if they dubbed those too!?) Gameplay-wise though it's sort of Disgaea-ish with a shitload of recruitable characters from Shadow Hearts, Suikoden, Gungrave, etc.

Worth checking out if you wanna lol at the VA, but there's plenty of better ones out there. :3

What eventually bugged me out was not the voice acting, but the lack of gameplay. La Pucelle, between battles you could explore the town (mainly just shop), and walk around freely. It seemed like there was not much other than battles in Chaos Wars, and they were typically paired with horrid cutscenes. Plus the curse squares and battle cutaways was cool mechanic.

Chaos wars had the right gameplay idea, but they ruined it with lowest-possible-budget voice acting and lazy publishing (Published by GameStop in the U.S. Seriously?) It was nice leveling up based on damage dealt instead of enemies killed (I think that's how it worked), but the only thing in-between levels was a house where your "army" lived. I probably would have finished it if my PS2 hadn't died.
I can't believe no one has mentioned the Tomb Raider series. Or is this just about RPGs? If not, get TR:Anniversary. It is a must play. And it's a reboot/remake of the original, so you can just get right into it. If you like that one, get TR:Legends next... TR:Underworld is kind of a lazy port, although not a bad-bad game, so get it if you become a fan or if you can get it for peanuts. xD
The Legacy of Kain/Soul Reaver series is also very-very good. The only downside is that it starts on the PS1. First get Soul Reaver (PS1) and Soul Reaver 2 (PS2), then get Legacy of Kain:Defiance (PS2). And if you liked the story and want to know how it all started (I'm 99% certain you will) get Legacy of Kain:Blood Omen (PS1). ...Too bad there are no more LoK games today. =(

Onimusha:Dawn of Dreams. Ok, I know someone did mention the Onimusha series, but Dawn of Dreams plays better and it has little to nothing to do with the first three games, so it may be the perfect point of entry for this series if you haven't played the others... Although, Onimusha 3 has Jean Reno on it, so it's kind of a difficult choice. =B
Silent Hill: The Room & Origins. The Silent hill series is well known, but most people will forget/avoid to mention these two awesome games. The Room is different, but a 'good' kind of different. And Origins, as you may have guessed, is a prequel of the original, so you'll get to revisit past locations and get to know more about Alessa and the cult, etc.
Mortal Kombat:Armageddon. If you ever were a Mortal Kombat fan but somehow lost track of the series, Armageddon tries to alleviate this by explaining what has the Mortal Kombat universe been building up to until that point. It also has every Mortal Kombat character ever created plus a few new ones, and a character editor so you can make your own.
Honorary mentions:
Darkwatch. Hey, an FPS where you're not a soldier in some kind of war (which gets old after a while). You play as a vampire in a steampunk western setting, need I say more? The game has some action and rpg elements too.
NFS:Most Wanted. I suck at race games, but I love this one. It feels authentic. Is kind of a sandbox racing game, and the city in which takes place has lots of variety. It doesn't have that 'samey' boring look that other NFS have.
Stella Deus. This is just a regular Strategic RPG. There's nothing really outstanding about it, except maybe its aesthetics (I'm not gonna lie, I like it just because of the art), but if you like SRPGs, one more can't possibly hurt you.
