Do you feel the heart pain at the end of the day when all the bread has to be tossed out?
Where do they all go?
Well yeah it is sad to see things go to waste but there is very little left over because we have got to know what sells and make our production centred towards that, depending on the time of year of course things change a lot, but what is left over is picked up by few organizations at the end of trade each day for the home less which is a good cause so at least they get to have some bread and stuff with there soup and what not and also a few local people with animals to feed buy what is left the next day but most goes to the home less for free.

I am a Baker\Pastry Chef by trade and have been working night shift for 27 years! I like to whip a nice pizza or pie etc and watch the sun come up each morning while waiting for the last of the nights production to finish baking.
What are you thinking about right now?
That I finally don't have to work Saturday but can not sleep now, I guess that is what you get after working night's for 27 fucking year's!
School threatens to call authorities if you're late picking up your kids.

My favorite part is actually before that. "If your child is dropped off before 7:40, there will be no adult supervision and we will call the authorities." Like, wait, back up a step. Who's going to call, exactly?
They really thought that through and these people are teaching our kid's, wow!
