obviously you should watch ancient 70s anime like Karate Master or Casshan.
I'm more on the 90's to early 2k's stuff, something about the style in that period I guess.

Psycho-Pass, that's a good one. I second the Big-O and Trigun recommendation, it's basically Batman through an anime filter. Gungrave is also a good one. and Cyber City Oedo 808.
