Probably Zestiria or Phantasia (or Star Ocean XD)
Phantasia was the first I played and it was interesting in its own right. I've played Symphonia and Legendia(?) and one of the other PSX/2 ones and just didn't like them that much. Either the characters were too boring/bland/default or the systems just felt bad/boring to play. I don't know if Legend of Heroes is the same series, but if so, they're alright but boring but somehow still alright (I'm not even sure if I like the series but for some reason I managed to play through the whole first game easily enough.)
I dunno, the Tales of series feels to me like a subpar Star Ocean series, but without any of the fun side stuff added. It feels like one of those Minecraft rip-offs where they make a shallow copy of the game but anyone who's played the original knows what's up.

Sorry if I'm shitting on your favourite series or something. It has it's moments but from what I've read, they tend to come way later in the game when the boring stuff is out of the way. That's... not really a great way to make a game.
Berseria has caught my interest character/story-wise and not let go. An a-typical hero with a-typical motivation going on an a-typical quest? I like that. None of this "I'm Joshmo and just got kidnapped by accident and want to get home" or "I'm Joshmo and let's go on an adventure or some shit oh look shit happened. oops?"
I dunno, it just feels a lot better.
Zestiria I never finished. It, uh, got a bit meh running around after a while. The maps were so large and there weren't even surfboards to help speed things up (as far as I got to, anyway. I can't quite remember where I left off - I know I had all the peeps, though.)

But for me, the biggest draw to the Tales of Games was the Action RPG Combat, and the character interactions. Plus, their plots are always so twisty and turny... Just those moments of OH SHIT like in Star Ocean 2 when you finally get to the (disc one) final boss and you realize you have no clue what was really going on.
I didn't really mind if that games were long, because it game me more time with all the characters. I just feel like there enough extra bits of entertainment from tales games that it helps smooth things over on some of the less great parts. Beat Tales of Berseria last night. That was the most fun I've had with the series in a long time, and the most interesting cast of characters since Xillia 2. Highly recommended.

STRANGELY ENOUGH I am also playing Persona 5 - I am doing so having temporarily dropped Berseria, though...not that I dislike Berseria (I think it's great) but anything Megaten-Related is gonna be top-priority for me.
I'm 5 hours in, so nothing has REALLY happened yet in terms of gameplay (which is a weird thing to say out-of-context - "5 hours!? That's like two RPG Maker games!", but mate, it's Persona). What HAS struck me right off the bad though is how serious the game has been so far, thematically speaking.
Minor spoilers below:
Teachers abusing students is a pretty big deal. Add in implied rape and suicide to the mix, and this is definitely a much darker Persona game than what we're used to.
I think it's been handled pretty well so far, though.
Also, I can look at the main menu all day.

I got close! I just enjoyed the sotry and characters a lot more. It just got... boring after a while. Doesn't mean it isn't a good game, though. Just that I'm terrible when it comes to finishing games that bore me too much. ^.^;

Need to reinstall it again, anyway (which means uninstalling something else because holy shit I'm running out of room on my 2TB drive. WTF, where did all that space goooooooooo. I don't even save movies or anime on my computer but god knows where the space disappeared to ;.;

Started playing Dragon Age: Inquisition, and promptly stopped.
It feels really cheaply made, all things considered, and the setting seems like faux Skyrim with Oblivion gates. Really weak. The battle system is tactical, but tries to pretend it's an action RPG. Maybe it gets better as you go, I don't care.
The face modeller was really intuitive and extensive, even if the hair options weren't plentiful.

I really, really wanted to like Inquisition since I loved DAO and DA2, but I regret spending as much time on it as I did, because it only got worse as it went along. I agree with all of your complaints. It later introduces some obnoxious mechanics where it forces you to grind on MMO-style fetch quests in order to advance the plot. That was about the point where I stopped playing.

I'm afraid that it's a little too closer to real-life from what I can handle, I was supposed to just shrug it off (near or full)squad wipes and mission fails?

I recently ragequit Horizon Zero Dawn for similar reasons as Inquisition. It sounds like you're on the same wavelength as me on DAI, so I'd advise not wasting your time on it.
Check out an LP before you decide that, though. There's some good 1st hour LPs out there that give you a decent idea of the gameplay. Frankly, I find them more than different enough to each other. I mean, people have said that the new LoZ is similar to Horizon too, even though they're quite different. Open world games aren't all the same.

I dropped the anime 2 episodes in since not even ufotable's beautiful animation could save such an uninspired story, so take that for what you will. I'm curious as to how they tied Berseria in with it, but I played Berseria instead of watching Zestiria, so I forgot the anime even existed.

... Except for that one annoying feature where you instantly lose if the MC is dead. It sucked in P3, it REALLY sucked in P4 since you could take control of your party and use a revival item, and it REALLY REALLY sucks here since your A.I. allies immediately use a revival item when anyone else in your party goes down, so why not the MC?
Well, at least you can save anywhere in the city?
