There are two boxes next to the actor list, near the middle. One is labeled "Character Graphic", the other is called "Battler Graphic". Double-click on the one that says Character Graphic to change the sprite that will show on the map. Double-click on the one that says Battler Graphic to change the graphic that will show in battle.

1. Switches don't use numbers, those are variables. Here's a tutorial on how to use switches. It works for all RPG Makers: http://rpgmaker.net/tutorials/320/
2. The only way you can delete actors is by changing the maximum amount of actors (the button right below the list of actors), or if you want to create a new actor on a slot occupied by another actor, just right click on the list of actors (on the specific actor you want to replace) and click Clear. This is the same for classes, items, enemies, and states. Again, it's the same for every RPG Maker.
