Speaking from my own experience, I enjoyed working on a fan game because I had a lot to work with already, and it was actually one of those "restraints provoke creativity" sorts of things.
This is actually a very good point.

Yeah guys, the audio is . . . really really bad. There was this incredibly huge amount of background noise that I think was coming from Max's headset/room. The audio sounds a little weird and overcompressed because I had to put the audio through a truly outrageous number of filters.
Umm...didn't we check the audio like twice and you said it was fine?

Can Fangames Be Good?
Fangames can be good, but why bother? If you are making a good game it is more artistically sound to actually have an original concept.

A full game is great, but not many people are going to play into a full game past where a demo would normally end anyway. An epic RPG is exhausting and if people don't have patience to finish a commercial RPG they probably don't have the patience to finish an amateur one. The very nature of amateur RPG game development facilitates demos/episodic releases.
A demo/episode showcases all of the same development that a full game would. Art, music, level design, writing, gameplay - it's not like one episode of a game doesn't have these things just because the story doesn't come to a conclusion.
