Which RPG Maker should I use?

2. Price. If you can't afford XP, VX, or Ace, go with one of the older ones.
The older makers aren't free, and all the English translations of RM2K and 2K3 are illegal. In fact, the only true legal maker you can get for free is Ace Lite.

You've always had some awesome stuff! I echo the sentiment of doing more original stuff. Not so much because I'm against rips or edits of any sort (I still wish DQ sets were readily available for Ace like they were for 2K/3, after all), but because I think you have what it takes to do original work that can potentially be sold through stores both here and over at RMW.

I echo the dislike of mobile phones. Of course, tablets on the other hand are a different matter. The screen is large enough, and if companies could see the value of a tablet (easier to port than a laptop), then it could possibly go somewhere someday.
Tablets are primarily touch screen right now, but I don't see why they can't be designed to include a port for a joystick / game pad for games that aren't easily converted to touch screen. It would still be easier to port that around than it would a laptop.

Dealing with NPC crowds
Since it's important to talk to the right NPC, you may want to consider some sort of indicator for this scene (like a flashing arrow over the NPC's head, or something to make them stand out). Usually it's not needed, but in a crowd of 30+, I think it would be necessary to reduce the frustration.
As others said, have them in groups where they are talking back and forth the first time around, and the playing character listens in, and then after that when he goes back a second time around a message could state "The conversation is of no interest to you."
In fact, you could mix it up between your "Yeah baby! / What a party!" comments with comments that "It's too loud to hear what they are saying" or "The man/woman/transvestite does not acknowledge you."
Whatever you do, I'd advise you against an NPC that doesn't say anything, because then it makes it hard for the player to decide who is going to say what, and who will not say anything at all, or if it's a bug in the event and was set to below versus "same as".

Dragon Fantasy: Origins
Quick saves aren't included in any of the RPG Makers by default. They're easier to implement in later editors (like RMXP, VX, and Ace) because of the scripting feature included there, since anybody with decent programming knowledge can create such a script and pass it off for others to use, but not so much in RM2K and 2K3. RM2K/3 didn't include scripting features, so any changes to the program essentially requires plug-ins or expert eventing. Plug-ins are very limited unlike the newer makers, and not everybody has the programming knowledge to event such a feature.
In any case, it appears this has been cancelled. Sad, but expected, since Ephiam has directed his attention into restarting the franchise. Still, it was a fun Atari-styled rpg and I recommend people in tune with the older styles of games give this one a shot.

Tales from Zilmurik: Collector's Edition
Definitely the better of the two choices. Some may wish to keep the old version for nostalgic purposes. In fact, the name "Origin" could reference the old versions.

The more I see where gaming has gone, the more I'm glad to have been part of the old school. Thank God for emulators. When my kids get old enough to play games, I'm going to introduce them to the gemstones of 8 bit Mario and Megaman. I'm going to plan gaming nights in front of the computer with a big screen monitor, and we'll take turns with SMB like my family did when I was growing up with the Atari and NES. And then I'll introduce them to Crystalis, Final Fantasy, Dragon Quest, Metal Gear, Zelda and Zelda II, and I only hope I'm there to see their faces of wow and wonder as the stories unfold, as they finally figure out the challenges, and complete the game.
Same with cartoons. They'll see real quality with the likes of Rescue Rangers and Darkwing Duck before they get caught up in the crap that plays today.
If us oldies want some of what we used to have back, it starts with us. Pass it on to our children, and hope that they will carry the torch that will one day fix this broken mess of Dora's and Barney's and....

Oh wait, that's not a DQ game? Damn, could have fooled me.
For me, DQ games have always tried to "one up" their previous game. Starting with the second one, and the introduction of multiple parties, the games have improved.
DQ 3 introduced day/night concepts and a whole second world to explore, and DQ 4 began the tradition of story development, chapters, and plot twists. So for me, these two games (first introduced in 8 bit) get my highest respects, because I think it helped drive the later games. While everybody talks about how much better Final Fantasy was compared to the first DQ game, none of the NES Final Fantasy games could hold a candle to DQ 3 and 4.
And while I'm at it, DQ 4 really pushed the limit as far as detail while still maintaining its 8 bit simplicity and charm. If ever anybody creates a ripped version for VX-Ace, I'll be all over it like maggots on spoiled meat.

What were some of the weirdest dreams you had last night?
Not last night, but a few nights ago I had this dream where me and my wife were on some sort of resort. The people there weren't exactly normal.
Some were vampires, and they would eat people and then string their dead carcasses on the walls. My brother turned into a large catfish, but with my bro's face instead of a fish's face. And he was swimming around eating things up. I made a joke at him about not being able to eat me, and he started to make this weird chomping sound and tried to eat my toes.
And then this girl walked passed the walls with the dead people and started screaming. I thought she was screaming about the dead bodies, but it turns out she was screaming because she thought she was blind. Actually, she had a sheet of notebook paper taped to her face, which was blocking her site, and she didn't know. Naturally, removing the paper allowed her to see beyond that sheet of paper. She didn't seem disturbed about the dead bodies, though.
And then I woke up. No logical sense in any of it. But I tend to have strange dreams the later into the night I eat, as in right before bed, and the heavier the content of the food is, as in the more fattier or fried the food I'm eating is.

A long time ago, but still pretty vivid. I had this dream once where my wife was dead and I was crying my eyes out, and we laid her down in the bed. And when I woke up, my wife was laying down in the bed next to me (it was early afternoon) and her eyes were wide open, staring blankly at the ceiling. Naturally, the glazed look in her eyes made me think my dream of her being dead was a reality. I started panicing and gasping. She then looked over at me and thought I had gone insane.
