I'm trying to improve the mapping and layout of this area. This is the central area, a little bit inspired by the temples in FFX/some Buddhist/Hindu temple layouts I've found online.

Just let your players be. Some people like that safety net of being overlevelled. Some players will do it deliberately, some will have it happen by accident.
I've found that grinding is something that players make an active choice to do even in the best balanced games, so there isn't much you can do to discourage it and name calling is kind of a low blow.

You phrased this as though it's a personal attack? Is there a good reason for people here to personally attack you or do you have some inflated sense of self-importance?
Based on what your profile says the mapping barely matches the game's concept and doesn't really reflect it either. You can post a game-relevant map without providing spoilers and you can have a field or a valley that isn't just a few trees and some grass. Elevation is a big thing in making RM maps look decent.
