Map display? Do you mean that little box that shows up after entering map if Map Display Name is set? If so, I'll probably be able to help, though there will be some RGSS work required to make it look right.

I need a title screen remake for my RPG Maker VX Ace conversion.
Are you using script to make game's windows 640x480 or are you working with standard VX Ace resolution? If you tell me that, I can easily help you.

Maps as Title Screens...
I understand concept behind maps as title screen pretty well - my previous project which ended only as demo (it's in Polish and I'd need translator to show it here) was made in 2k3 using BetterAEP by Cherry to make map as title screen. In the past I've even made RGSS script for XP that basically allowed for titlescreen made with events.
But yeah, you can do some really cool stuff with events that would be hard to achieve with pure RGSS. I think I'll record titlescreen of that 2k3 game I was talking about and post it here.

Level resets when changing class
Hm... I'll be shooting blindly since I don't know which maker do you use, but in most makers, I'd first save current level to a variable and then restore it using "change level" option.
How to add fun to grinding?
If your game requires grinding, there's something wrong with your game. Try to adjust skill forces, experience given to player after killing enemies, damage of weapons, so game won't feel grindy.
Don't overreach to the other side of the spectrum though! Game can't be too easy either.

Is RNG good or bad?
This is my opinion on randomness:
I hate random encounters. I understand that they were created to avoid sprite limit on early home consoles, but never liked those unless there were way to avoid it such as monsters attacking only in very specific areas (think tall grass in Pokemon).
Otherwise randomness is fun. I have nothing against random loot as it IMO enhance game rather than make it worse.
Random dialogs (not plot specific, just chit-chat you get from people you talk to) can even enhance game in such way, that it removes one of most common errors in JRPG games, people saying same stuff forever, that is.
Randomness can also be used to determine things like weather.
Long story short: Randomness in RPG games is almost always good. Unless it is for random encounters - those sucks.

Character generator for VX Ace that does kids?
Yes, I know VX Ace has character generator and frankly I'm using it quite extensively in my game, but unfortunately it doesn't generate children and there's only so many kids charsets and facesets in default RTP. Can you help me?
